Somewhere in the 1990s, the idea took hold that plastic cutting boards are more sanitary than wooden ones. Health departments recommended plastic. Cooking shows switched. And millions of home cooks threw out perfectly good hardwood boards in favor of polyethylene replacements.
The actual research tells a more interesting — and more useful — story.
The Study That Changed the Conversation
In 1993, microbiologists Dean Cliver and Nese Ak at the University of California, Davis, set out to confirm the obvious: that plastic boards are more sanitary than wood.
They didn't confirm it. They found the opposite.
When bacteria were applied to the surface of both plastic and hardwood cutting boards, the plastic boards could be effectively sanitized when new. But once the plastic boards had knife scars — which happens within days of regular use — bacteria settled into the grooves and resisted washing, scrubbing, and even bleach solutions.
The wooden boards behaved differently. Bacteria applied to the surface were pulled below the surface by capillary action within minutes. Once below the surface, the bacteria didn't multiply. They died. Hardwood's natural properties — low moisture at depth, antimicrobial compounds in the wood fibers, tight grain structure — created an environment that killed bacteria rather than harboring them.
New bacteria applied to a cleaned wooden board died at the same rate. The wood didn't become more contaminated with use. The plastic did.
What Happened After
Cliver and Ak published several follow-up studies through the late 1990s and early 2000s. The findings held across multiple wood species (maple, birch, beech, and others) and multiple bacteria types (Salmonella, Listeria, E. coli).
The key findings, condensed:
Hardwood surfaces pull surface bacteria below the wood grain within three minutes of contact. Once below the surface, bacteria do not return to the surface and do not survive.
Plastic surfaces hold bacteria in knife scars. Standard washing removes surface bacteria but does not reliably reach bacteria in scarred grooves. Even dishwasher cycles failed to fully sanitize heavily scored plastic boards.
Hand-washing with soap and hot water was effective at sanitizing wood surfaces. The same washing was not reliably effective at sanitizing scarred plastic surfaces.
The Grain Structure Matters
Not all wood is equal here. The studies showed that closed-grain hardwoods outperformed open-grain or porous woods. Hard maple, with its tight, closed grain structure, was among the best performers. Softer woods with larger pores — like some varieties of pine or the open-pored oak sometimes used in European boards — didn't pull bacteria below the surface as effectively.
This is one of the reasons hard maple is the preferred species for kitchen cutting boards. It's not just about hardness or aesthetics. The grain structure is doing antimicrobial work.
End-grain construction, where you're cutting into the fiber ends, exposes more of these capillary channels to the cutting surface. In principle, this means end-grain boards may pull surface bacteria below the grain more efficiently than edge-grain boards of the same species. The published research didn't test construction types separately, but the mechanism supports it.
What the Health Codes Say Now
Despite the research, many health departments still recommend plastic or require non-wood surfaces in commercial kitchens. This is regulatory lag more than science. Commercial kitchen regulations prioritize surfaces that can be run through industrial dishwashers, and plastic fits that workflow.
For home kitchens, where boards are washed by hand and knives are sharper and lighter than commercial equipment, the research clearly supports wood as a safe and often superior choice.
The USDA's current guidance for home kitchens permits both wood and plastic cutting boards and recommends washing both with hot soapy water after each use. They no longer recommend plastic over wood.
The Practical Takeaway
If you use a hardwood cutting board and wash it with soap and hot water after each use, you are using one of the most sanitary cutting surfaces available for a home kitchen. The wood's natural properties work in your favor every time you clean it.
If you use a plastic cutting board, it needs to be replaced as soon as it develops significant knife scarring — which, depending on use, can be within months. A new plastic board sanitizes fine. A scored one doesn't, reliably.
This is where cost enters the picture. Replacing plastic boards every few months costs more over five years than buying one good hardwood board and maintaining it. An American-made hard maple board from Bevel & Bond costs more upfront and less over its lifetime, while providing better food safety characteristics the entire time.
How to Keep a Wooden Board Clean
The protocol is simple:
Wash with hot water and dish soap after each use. Scrub the surface, rinse thoroughly, and stand the board on its edge or prop it upright to air-dry. Both sides should have airflow.
Don't submerge a wooden board. Don't put it in the dishwasher. Standing water penetrates glue lines and causes warping. A quick, thorough wash and dry is better than a soak.
For extra sanitation after cutting raw meat or poultry, spray or wipe the surface with white vinegar, let it sit for five minutes, then rinse. Some people follow with a hydrogen peroxide wipe. The vinegar alone is effective for most household purposes.
Oil the board regularly with food-grade mineral oil or a mineral oil and beeswax blend. This isn't just for appearance — it keeps the grain tight and the moisture content stable, which maintains the antimicrobial properties the research identified.
The Bottom Line
The "plastic is more sanitary" claim hasn't been supported by research in over thirty years. Hardwood cutting boards, particularly closed-grain species like hard maple, are demonstrably effective at eliminating surface bacteria through natural mechanisms that plastic can't replicate.
Buy a good hardwood board. Wash it after each use. Oil it monthly. You'll have a surface that's cleaner than the plastic alternative sitting on the shelf next to it.
