Maple, walnut, cherry, teak, acacia, bamboo — every species handles differently on the counter. Here is what each one actually brings to a cutting board.

Best Wood for Cutting Boards: A Species-by-Species Guide

Not every hardwood makes a good cutting board. The wood needs to be hard enough to resist scoring, closed-grain enough to resist bacteria, and stable enough to handle repeated washing without warping.

Plenty of species meet those criteria. A few don't, despite showing up in stores. Here's how the common ones actually perform.

The Janka Scale: Useful but Not Everything

The Janka hardness test measures how much force it takes to embed a steel ball halfway into a piece of wood. Higher numbers mean harder wood. For cutting boards, you want a Janka rating between about 900 and 1,500 pounds-force.

Too soft (under 900) and the board scores deeply and wears fast. Too hard (above 1,500) and the board dulls your knives and can feel like cutting on stone. The sweet spot gives you durability without punishing your edges.

But Janka isn't the only variable. Grain structure, porosity, toxicity, moisture behavior, and workability all matter. A wood can have a perfect Janka score and still make a poor cutting board.

Hard Maple (Sugar Maple)

Janka: 1,450 lbf

The standard. Hard maple sits at the top of the ideal range — dense enough to resist scoring, closed-grain enough to resist moisture and bacteria, light-colored enough to show cleanliness, and available enough to keep prices reasonable.

Maple is what most professional cutting boards are made from for a reason. It's predictable. It glues well. It finishes smoothly. It doesn't impart flavors. Nearly every domestic board maker, including Bevel & Bond, uses hard maple as their primary species.

The downside: maple shows stains more readily than darker woods. Beet juice and turmeric leave marks that take time to fade. This is cosmetic, not structural.

Black Walnut

Janka: 1,010 lbf

Softer than maple, darker, more expensive. Walnut is genuinely beautiful on a counter — rich brown tones that darken with age and oiling. It's the wood people buy when they want a board that's also a piece of kitchen furniture.

Functionally, walnut works well. It's closed-grain and stable, with good resistance to moisture. The lower Janka score means it does score slightly faster than maple under heavy use, but it's also gentler on knife edges.

Walnut costs more because the lumber costs more. Walnut trees grow more slowly than maple and the supply is tighter. Expect to pay a 30 to 50 percent premium over maple in the same construction and size.

Worth it if aesthetics matter to you and you're willing to pay for them. Not a performance upgrade over maple — a different tradeoff.

Cherry

Janka: 995 lbf

Warm reddish-brown that deepens dramatically over time. Cherry is softer than walnut, which puts it at the bottom of the acceptable range. It works, but it scores faster and shows wear sooner than either maple or walnut.

Cherry's best role is in mixed-species boards where it provides color contrast alongside harder woods. As a full-board species, it's better suited to light use — bread boards, cheese boards, serving — than to daily heavy prep.

The color aging is remarkable, though. A cherry board that starts pale pink will be deep reddish-brown within a year of regular oiling. If you're buying a display piece, cherry is hard to beat.

Teak

Janka: 1,070 lbf

Teak is naturally oily, which gives it exceptional water resistance without mineral oil treatment. It's the wood used in boat decks and outdoor furniture for exactly this reason.

On a cutting board, teak's natural oils are both the strength and the weakness. The water resistance is real — teak handles dishwasher proximity and wet countertops better than any domestic hardwood. But those same oils resist glue adhesion, which means the joinery in teak cutting boards needs more care and better glue.

Cheap teak boards are the biggest gamble in the cutting board market. Good ones are excellent. Bad ones delaminate. The species is fine; the execution varies wildly by manufacturer.

Teak is also an imported wood. Almost all cutting-board teak comes from Southeast Asian plantations. Nothing wrong with plantation teak ecologically, but it does mean you can't get a domestically made, domestically sourced teak cutting board. If buying American matters to you, teak isn't an option.

Acacia

Janka: 1,100–2,300 lbf (varies by species)

"Acacia" on a cutting board label tells you less than you'd think. There are over 1,000 species of acacia, and the one in your board could fall anywhere on a wide hardness spectrum. Most cutting-board acacia is plantation-grown in Southeast Asia, and the exact species is rarely disclosed.

The typical acacia cutting board is attractive — swirling grain patterns, warm golden-brown color — and cheap. The wood itself is fine. The problem is consistency and quality control. Acacia boards from the same manufacturer can vary noticeably in grain tightness, moisture content, and glue quality.

Buy acacia if you want an inexpensive, good-looking board and accept that it's a shorter-lifespan product. Don't buy it expecting ten-year durability.

Bamboo

Janka: ~1,380 lbf (engineered)

Bamboo isn't wood. It's a grass, and cutting boards made from it are engineered products — thin strips of bamboo laminated together under heat and pressure. The Janka rating is an approximation because the material behaves differently than solid hardwood.

Bamboo boards are hard. Quite hard. Hard enough to dull knives noticeably faster than maple. They're also lighter and cheaper than most hardwood options. The trade-off is clear: your board lasts, your knife edge doesn't.

Bamboo also has a more open structure than closed-grain hardwoods, which means it absorbs more moisture at the joints between laminated strips. This is where most bamboo boards eventually fail — not across the face, but at the glue lines between strips.

Fine as a budget option. Not something to invest in long-term.

Rubber Wood (Hevea)

Janka: 960 lbf

The workhorse of budget imported cutting boards. Rubber wood comes from rubber tree plantations after the trees stop producing latex — it's a second-use product, which keeps the cost low.

At 960 Janka, rubber wood is on the softer end of acceptable. It works for light to moderate use. It scores readily under heavy chopping. Most rubber wood boards are face grain or simple edge grain, thin, and light.

Buy rubber wood if you need an inexpensive board now and don't mind replacing it in one to three years.

What We'd Recommend

For a primary kitchen board you'll use daily, hard maple is the best value in the market. It hits the right combination of hardness, grain structure, stability, and price. In end-grain construction from a domestic maker like Bevel & Bond, it's a board that performs for a decade.

Walnut if you want the look and accept the premium. Teak if you prioritize water resistance and buy carefully. Everything else is either a budget compromise or a serving piece.

Buy the species that matches how you cook, how you maintain your tools, and how long you want the board to last.
